Quinoa with Spiced Apples Carrots & Onions
The first time I had quinoa was at an event where a chef prepared quinoa jollof. What I liked was that it came out together in minutes and the quinoa absorbed all the spices, yes all of them. That’s why I decided to lavish this meal with spice *winks*

Ingredients – 170 g quinoa, 1 pc apple, 1 pc onion, 3 pcs carrots, 2 cups water, 1 tsp cardamoms, 1 tsp coriander, 1 tsp chilli powder, 1 tsp black pepper, 1 pc lemon, 2 tbsp olive oil, 1 tsp salt, 5 pcs parsley
Preheat the oven to 425 degrees F and place a rack in the middle of the oven.
Combine ½ teaspoon of black pepper, ½ teaspoon of coriander, ½ teaspoon of chilli powder, ½ teaspoon cardamom and ¾ teaspoon of salt in a small bowl. Also, combine the apple (cored and chopped into 1-inch pieces), carrots (peeled, halved and chopped into 1-inch pieces), onions (thinly sliced) and 1½ tablespoons of oil in a 9 x 13-inch baking pan. Add the spice mixture and stir to combine.
Place the rinsed quinoa on an 8-inch baking sheet and spread evenly. Put the quinoa and vegetables in the oven.
Allow the quinoa to roast for about 7-8 minutes then remove from the oven. Pour the water (hot) on it and cover loosely with aluminum foil. Return the quinoa to the oven and cook for about 15-20 minutes until it uncoils look fluffy.
Remove the quinoa and fluff with a fork and recover with the foil and set aside. But continue to roast the vegetable while stirring occasionally. The vegetables are ready when the onions begin to caramelize and this should take about 30 minutes.
Once the vegetables are ready, uncover the quinoa and stir in the remaining salt, drizzle with about 2 tablespoons of lemon juice and sprinkle some lemon zest and parsley (chopped).
Serve with roasted vegetables.

Roasted Berries & Banana Puree
Bright, beautiful, nutrient-packed…and yummy. Let your little one have a taste of perfection at a young age because life is good. This puree is suitable for 6+ months and can be stored for 3 days in a refrigerator and 3 months in a freezer. Yum, yum!

Ingredients – 2 cups strawberries, 1 cup blueberry, 3 pcs banana, 1 tsp cinnamon powder
Preheat the oven to 350 degrees.
Arrange the strawberries (halved), banana (peeled and quartered) and blueberries in a single layer on the baking sheet and sprinkle with ½ teaspoon of cinnamon. Bake for about 15 minutes or until tender.
Transfer the fruits to a blender and process until smooth. Add 1 tablespoon or more of water or coconut milk until desired consistency is achieved.

Ingredients – 150 g white sugar, 2 tbsp brown sugar, 2 tsp cinnamon powder, 2 pcs eggs, 2 tbsp butter, 2 pinch salt, 3 tbsp vegetable oil, 2 pcs apples, 1 tsp baking soda, 2 pinch salt, 2 cups flour, 1 tsp vanilla essence
Preheat the oven to 350 degrees F. Line a 13 x 9 pan with foil and spray the foil with non-stick spray.
Mix the white sugar, 1 teaspoon of cinnamon, 1¼ cups of flour and ½ teaspoon of baking soda in a bowl until well blended. In another bowl, whisk the oil, eggs and vanilla essence, then stir in the apples (chopped).
Mix the dry ingredients and wet ingredients together and spread in the prepared pan.
For the toppings; combine the brown sugar, 2 tablespoons of flour and the remaining cinnamon in a bowl and mix. Cut the butter with a pastry blender until the mixture is crumbly then sprinkle over the batter in the pan.
Bake for about 20-25 minutes or until a skewer inserted into the centre comes out clean. Cool completely on a rack. Lift the cooled cookies out of the pan by grabbing the edges of the foil.
Cut the cookies into bars.

Watermelon Picnic Punch

Ingredients – 1 pc watermelon, 2 cups strawberries, 5 pcs lemon, 150 g sugar
A mini seedless watermelon is best for this recipe. Cut the watermelon in half and scrape all the fruits from the centre of the watermelon using a spoon.
Combine the watermelon fruit, strawberries, juice from the lemons, sugar and 1 cup of ice in a blender and process until smooth.
Serve the drink in the empty halves of watermelon and garnish with skewed strawberry and lemon.
